I made this cake for the first Bake n Banter gathering. The theme was Traditional British so I thought of making a lemon meringue pie then decided to make it a cake!
For the sponge cream together 200g caster sugar and 200g butter. Beat in 3 eggs and add 200g self raising flour. Bake in 2 round tins for 15-20 minutes at 190.
Leave the cakes to cool then cut them both horizontally to make 4 sponges.
Place one sponge on a plate or cake board and cover with a generous layer of lemon curd. Place the next sponge on top and add another layer of curd. Repeat and place the final sponge on top.
For the meringue, put 200g caster sugar in a pan with 150ml water. Bring to the boil and continue to boil for 5-10 minutes.
